Servings: 10-12 1 cup portions
Directions:
1) In a large soup pot, brown 1 onion in 4 tbsp butter.
2) Add 6 cups water, packet contents, 800g chopped pumpkin (or cook pumpkin and purée prior); boil, then simmer covered until cooked (approx 45 mins).
3) Add 3 cups cream or milk, 1 tbsp maple syrup, 1 chopped apple; simmer for 10 mins. Add extra water as needed. Mash or purée pumpkin with some of the soup, stir. Season with salt and pepper.
Option: purée cooked soup.
Slow cooker instructions: Brown onion, add all ingredients and cook on high for 6-8 hrs.
