Beetroot Crostini with Soft Feta or Hummus
Paired with Moroccan Lentil Soup + Hot Shots Winter Rum Cocktail.

A vibrant appetiser meets a warm, spice‑rich soup — finished with a cosy winter cocktail. This is a perfect cold‑weather pairing: colourful, comforting, and effortless.
Ingredients
Beetroot Crostini
- 1 tbsp Social Eats Beetroot Dip Mix (our sister brand)
- 1 cup base of your choice:
- Soft feta
- Sour cream
- Greek yoghurt
- Hummus Or any combination
- 1 baguette or sourdough loaf, thinly sliced
- Olive oil for brushing
Moroccan Lentil Soup
- 1 packet Lolli’s Moroccan Lentil Soup Mix
- Ingredients list from back of packet
Winter Cocktail: Hot Shots Rum + Cloudy Apple
- 45 ml Hot Shots Rum Liqueur (our sister brand)
- 120–150 ml cloudy apple juice
Optional: warm gently for a mulled‑style drink
Method
1. Make the Beetroot Dip
Combine 1 tablespoon of Beetroot Dip Mix with 1 cup of your chosen base. Soft feta = rich, sour cream = tangy, yoghurt = fresh, hummus = earthy. Stir until smooth and refrigerate for 10 minutes to thicken.
2. Toast the Crostini
Brush bread slices with olive oil and bake at 180°C until crisp and golden.
3. Assemble
Spread each crostini with Beetroot Dip. Top with a spoon of soft feta or an extra dollop of hummus.
4. Simmer the Moroccan Lentil Soup
Cook according to pack directions at least 2 hours before serving…the longer the better.
5. Make the Winter Cocktail
In a heat‑safe mug or glass:
- Add Hot Shots Rum Liqueur > Find here
- Pour in cloudy apple Juice
- Warm gently on the stovetop or microwave until cosy (not boiling). It becomes a smooth, spiced winter drink with rum warmth and apple sweetness.
6. Serve Together
Plate the crostini beside a warm bowl of Moroccan Lentil Soup and finish with the Hot Shots winter cocktail. A full winter trio: colour, comfort, and a warm rum finish.
